Cake

  • 1.5 ripe avocados
  • 1 tsp of lemon juice
  • 2 sticks of butter (220 g)
  • 1 cup of sugar
  • 1 tsp of vanilla extract
  • 4 eggs
  • 2 3/4 cups of flour
  • 3 3/4 tsp of baking powder
  • 1/2 cup of ground almonds
  • 3.5 Tbsp of milk
  • Pinch of salt

Puree the avocado with a fork. Add the lemon juice to it in order to keep the green color for the cake.

Then, add the butter, sugar, vanilla extract, salt. Mix everything together well.

Add the flour, baking powder, and ground almonds in three portions alternating with adding milk one Tbsp at a time.

Mix everything well. The dough will be heavy.

Coat a bread pan or a tube cake pan with butter and flour to prevent sticking.

Bake at 350 F (180 C) for 60 min.
